Pancakes!

Pancakes!

First off, summer is over. How did that happen?! I feel terrible that I failed to devote time to the blog. In my defence, I have no AC, and when it is 35 degrees outside, turning on my oven sounds like the worst thing.

ANYWAY, let's talk about breakfast. Breakfast is by far my favourite meal. The best part about breakfast food? You can eat it whenever you want to. Butter chicken in the morning? No thanks. Pancakes and bacon for dinner? YES PLEASE.

Pancakes are my go-to breakfast food of choice. They are super easy, and you can add whatever you want in or on them - like chocolate chips, blueberries, whipped cream, Greek yogurt. Mmmm...

The recipe I use came from the depths of the internet many, many years ago. It was called IHOP copy cat pancakes. I scribbled down the recipe right before making them, complete with arrows pointing to what you mix up first, second and third. There are no descriptions of how to actually make them, just the ingredients and arrows.

Somehow I managed to interpret my scribbles and arrows. The result are amazing, fluffy pancakes.

RECIPE
Fluffy Pancakes
Makes ~8 pancakes (depends on size)

Ingredients

1 1/4 cups     all purpose flour
1 tsp              baking powder
1 tsp              baking soda
pinch of salt           

1                    egg*
1 1/4 cups    buttermilk**

2 Tblsp        melted butter***
1/4 cup        sugar

Instructions
------------
1. Mix together the first 4 ingredients in a bowl (flour to salt) and set aside.
2. In a small bowl, whisk together egg and buttermilk.
3. Melt the butter in microwave or stovetop. In a small bowl, combine with sugar.
4. Combine the egg and buttermilk with the dry ingredients, then add the sugar/butter mixture.
6. Gently mix all the ingredients until just combined. Tip: Air pockets are a good thing for pancakes! Don't overmix - lumps are even okay! 
7. Heat a large fry-pan/skillet or griddle with a blob of butter (or oil). Using a laddle, drop mixture into pan in your preferred pancake size and shape. (If you're adding extras like chocolate chips, do it once they are poured in the pan)
8. Once bubbles start to appear on the tops, they are ready to flip. Cook until golden on both sides.
9. Continue until all your mixture is used up.
10. Add your favourite toppings and enjoy!

Notes
* Vegan: I have used a flax egg in the past - while not quite as good, it still works!
** I never have buttermilk in the house, but my mom always taught me to do regular milk with a splash of white vinegar to get that tang. I also typically use almond milk, which will curdle with the vinegar, but still works! 
*** Can also use non dairy butter. I have subbed coconut oil and it still works too!
